Absolute heavenly, the "Bijoux" Earl Grey Apple is impeccable. The Vanilla Chantilly is incredibly fluffy and the Yuzu Cremeux is a great balance for the Earl Grey Mousse so it isn't too overpowering in taste, it also makes the Apple Coulis not too sour. The Almond Sponge was very unexpected and it taste amazing with the Crispy Milk Chocolate base. 10/10 would buy again.
